Chocolate Victoria is our own brand of traditional Mexican hot chocolate that I created for Victory Garden. Customers were always asking us for hot chocolate, but I was hesitant to do it because it was something already so prevalent in the neighborhood. I tried making a few cups with goat milk, but I was not happy with the results. Then it dawned on me two years ago that the best solution was to do a Mexican hot chocolate prepared with water. Many of you know that I am half Mexican, and grew up going there often. I have always loved the more rustic Mexican version of hot chocolate, and thought it fit right into our menu. It is made by grinding cacao nibs, sugar, cinnamon sticks, and almonds through a mill, then forming them into discs. We prepare each cup of Chocolate Victoria to order with water and a splash of almond milk, and whisk it with a wooden molinillo to froth it up. I love this preparation because it is very rich, yet light. Hot chocolate is no longer an indulgence, but a daily dose of happiness.
